We made cookies this week - oil-free, butter-free, egg-free DELICIOUS cookies (cinnamon/cereal and also chocolate/chocolate chip mini cookies) Crushing cereal for the cookies.
Egg-free, Butter-free, Oil-free, Chocolate Chocolate-Chip Cookies Recipe adapted from “Health-by-Chocolate Cookies” From The Sneaky Chef™
1/3 c white flour* 1/3 c wheat flour* 1/3 c wheat germ* ½ t baking soda ½ t salt ¼ c cocoa powder ¼ c sugar ¼ c brown sugar 1 t vanilla ½ c chopped frozen spinach (¾ c fresh) ** 1/3 c (heaping) frozen blueberries ** ½ ripe banana, mashed well ¼ c applesauce 1 T milled flaxseed + 3 T water (instead of an egg) ½ c dark chocolate chips
Preheat oven to 350°. Combine flour blend, soda, salt and cocoa powder. Thaw blueberries in water; drain. Cook spinach in water; drain. Puree spinach and blueberries in food processor or blender until smooth. In large bowl, mix together remaining ingredients except chocolate chips. (The fruit and veggies replace your butter and oil.) Mix in dry ingredients and then fold in chocolate chips. Drop by teaspoonfuls onto greased baking sheet. Bake 12-14 minutes. Makes mini-cookies. Store in airtight container at room temp. Eat more quickly than slowly or they will start to dry out! ;)
* This is 1 c “Flour Blend” from Sneaky Chef ** This is ¼ c “Purple Puree” from Sneaky Chef (Sneaky Chef recipe calls for 2 c frozen (3c fresh) spinach and 1.5 c blueberries, but that will give you 1 c yield - more than this recipe needs. But it is easier to make a larger batch and freeze the extra for next time you make these, if you want.)
